Today, as a Toque d'Auvergne and Maître-Restaurateur, he perpetuates this family tradition with his own creativity, driven by a single desire: to help you discover the soul of our Auvergne through its authentic flavors. His traditional homemade cuisine showcases our regional products: foie gras flour (his grandmother's recipe!), pounti, truffade, tripoux Margaridou, Salers beef with ceps... not forgetting our "famous" trout, caught directly from the garden pond before reaching your plates, for unparalleled freshness. And finally, the region's fine cheeses, of course: Cantal, Saint-Nectaire, Bleu d'Auvergne, closely followed by decadent desserts, including the must-try blueberry tart or the delicious Vic Chantilly cream cones...
